The lid for the barrel was made of stoneware covered with a layer of ceramics. It protects food from drying out and weathering, further minimizing the spread of the intense smell of sauerkraut. By applying the lid to the water-filled pot collar, we cut off the air supply to the inside of the barrel, thus making the food inside acquire a special taste. Stoneware barrels do not react with food, which makes them not only the best but also the healthiest choice.
