✅ Warm up gradually and avoid thermal shock – do not immediately set the highest power of the burner and do not pour cold water on the hot pan so as not to damage its structure.

✅ Use the right accessories – instead of metal tools, choose blades and stirrers made of wood, silicone or nylon that will not scratch the surface.

✅ Wash gently and dry – preferably by hand, with a soft sponge and dishwashing liquid; the dishwasher is possible, but it can speed up tarnishing. After washing, always wipe the pan dry to avoid streaks and stains.

Ingredients:

• 2 eggs
• a handful of fresh spinach
• 2 to 3 cubes of feta cheese
• 1 teaspoon olive oil
• pinch of pepper

Preparation:

1. Heat the olive oil in a pan.
2. Toss the spinach and fry for 1 minute.
3. Beat the eggs, season with pepper and pour into a pan.
4. Add crushed feta and fry over low heat covered to cut the mass.

Ingredients (for 2 servings):

• 150 g rice noodles (ribbons)
• 200 g chicken or shrimp breasts (optional tofu)
• 2 eggs
• 1 clove garlic (chopped)
• 1 handful of mung bean sprouts
• 2 tablespoons fish sauce (or soy sauce as a substitute)
• 1 tablespoon cane sugar (or regular sugar)
• 1 tablespoon lime juice
• 1 tablespoon oil (e.g. sesame seeds)

• Chili in flakes (optional)

Preparation method:

1. Macaron: cook or soak according to instructions (until soft, but not overcooked).
2. Fried: In a wok or large frying pan, fry garlic and chicken (or tofu) in oil.
3. Eggs: pour the eggs into the pan, mix and fry like scrambled eggs.
4. Add pasta and pour the sauce: fish sauce, sugar, lime juice. Mix it all up.
5. Finally add the bean sprouts and sprinkle with peanuts, chives and chili.
