The blade of the Shiori 撓 Homura Surai o knife length 21 cm is made of 67 layers of Damascus steel 10Cr15CoMov, which provide exceptional strength and abrasion resistance. The special, serrated edge has been designed to easily cut a hard, crispy crust of bread, without crushing the soft interior. Thanks to the hardness of 60 ±1 HRC , the blade remains sharp for a long time, guaranteeing precision and comfort of use.

The Homura Surai knife has been designed with maximum comfort in mind. Weighing only 180 g, with a perfectly balanced design, allows for precise control when cutting. The handle made of burnt oak wood o length 12,5 cm fits securely in the hand, so that even long loaves can be cut smoothly and effortlessly. Every element of this knife serves one purpose – providing comfort and accuracy that you will appreciate every time you use it.
