The contact of the antifreeze protection thermostat is switched when the temperature measured by the capillary falls below the value set by the knob. When the temperature rises above this value, the contact will automatically return to its initial position.

The capillary along the entire length is filled with gas, which under the influence of temperature changes volume causing the mechanism changing the position of the working contact to work. The capillary reacts to the temperature along the entire length.
