How does drying work?

Drying is simply dehydration. By evaporating approximately 70% of the water contained in fruits and vegetables, the products retain their durability. As water evaporates, the ingredients in fruits and vegetables become concentrated, which is why, among other things, dried products are always sweeter than fresh ones.
