Advantages of cooking in clay

Clay is fundamentally different from aluminum, cast iron or stainless steel. It retains moisture, which is slowly released into dishes during cooking. It makes a huge difference! The meat remains juicy, the vegetables aromatic, and the bread crispy on the outside and fluffy on the inside. The upper part of the pan is intentionally unglazed. It can be soaked in water before use, allowing it to function naturally. The bottom, on the other hand, is glazed from the inside, which facilitates cleaning and maximizes durability.
