Why Separate Bags
Sous vide works thanks to the fact that water at a given temperature flows around the entire bag. If two bags adhere flat to each other, a zone is formed between them, to which water does not reach, and the meat in this place is cooked slower than on the rest of the surface. With one steak it doesn't matter, with six it makes the difference between an equal score and a lottery.
Second function
The frame weighs down the contents and does not allow the bags to float to the surface. A stuffed bag is a piece of product above a water mirror, which is an area where processing simply does not take place. The vertical setting also makes it easy to remove individual portions during bath work.
