Our knife and scissors sharpener equipped with an advanced slot system. The COARSE tungsten carbide slot is used to give a new shape to heavily blunted blades. The FINE slot with ceramic rods smoothes and polishes the edge to perfection. An additional, dedicated ceramic roller allows you to quickly sharpen scissors.
The Karl Hausmann arrow is distinguished by the possibility of precise adjustment of the sharpening angle (14°-24°). Thanks to this, you do not destroy the edges with a universal angle, but adjust it perfectly to the tool – from delicate knives for filleting (16°), through standard kitchen knives (20°), to heavy cleavers (24°).
The construction based on durable ABS plastic with a "Soft Touch" finish ensures a comfortable grip. The rubberized, non-slip base makes the sharpener hold the table top firmly while working, which is crucial for the safety and precision of sharpening.
⭐INSTRUCTIONS FOR SHARPENING KNIVES
- Select the sharpening angle according to the instructions, then use the knob to set the sharpening angle.
- Place the sharpener on a flat surface holding it by the handle. Then place the knife in the selected Coarse or Fine slot.
- Place the knife perpendicularly in the appropriate slot, drag the blade through the gap evenly pressing, the knife should always be sharpened from the root to the tip.
- Continue for about 8-10 times until the knife is sharp (the number of drags depends on the degree of sharpening and damage to the knife).
⭐INSTRUCTIONS FOR SHARPENING SCISSORS
- Place the sharpener on a flat surface.
- Holding the sharpener in one hand and scissors in the other, place the scissors blades between the ceramic rod, then press and move the scissors forward. Then tightening the scissors at the same time pull to each other until the scissors are completely closed.

❓ Will I sharpen serrated knives with this sharpener (e.g. for bread)?
We do not recommend sharpening serrated knives in COARSE and FINE slots, as they can smooth teeth by changing the properties of the knife (as many of our customers have noticed).
❓ How to set the right sharpening angle?
There is a scale on the knob. For most standard kitchen knives, the optimal setting is 20°. For thinner knives (e.g. for filleting) choose 16°, and for thick cleavers or hunting knives – 22-24°.
❓ Is the sharpener suitable for ceramic knives?
This model (manual version with tungsten carbide) is designed for steel knives. For ceramic knives, we recommend sharpeners equipped with diamond abrasive (also available in the Karl Hausmann offer).
❓ When to use the COARSE slot, and when to use FINE?
- COARSE (Carbide): Use only if the knife is very blunt or has a damaged blade. This stage "tears" the metal, giving the blade a new shape.
- FINE (Ceramics): Use for daily sharpening of slightly blunted knives and always as the last stage after sharpening in the COARSE slot (for smoothing the edges).
❓ How to properly sharpen scissors?
Insert the scissors into a dedicated hole, then make a move as if you wanted to cut the ceramic roller while pulling the scissors together (closing them). A few repetitions are enough to restore their sharpness.
❓ Is the sharpener safe for expensive knives?
Yes, provided that the correct angle is selected. For expensive knives that are not very blunt, we recommend using mainly the FINE (ceramic) slot, which is gentler on steel and is used for edge polishing.
❓ Does the device "slip" on the counter?
No. The sharpener is equipped with a solid anti-slip pad and ergonomic handle, which – as confirmed by user reviews – ensures full stability even on a smooth kitchen counter.
