The hardness of NATUR knives on the Rockwell scale is 53 – 54 HRC – the perfect compromise between strength and flexibility. The knives are resistant to cracks, and at the same time cope well with everyday cutting, chopping and portioning.

➡ For comparison: kitchen knives start at 52 HRC and above 57 HRC become harder but more brittle.

To keep the knives running for as long as possible:

• Wash them only manually,
• do not leave soaked,
• store in a block or on a strip so as not to dull the edges,
• regularly sharpen on ceramic or steel shell.
