The cast iron from which the vessel is made is thick and heavy to properly accumulate and maintain a high temperature.

The black surface was obtained thanks to the unique process of firing cast iron in vegetable oil at a very high temperature (oxidation). Oxidized surface reduces susceptibility to rusting.
