Ingredients (for 2 servings):

• 150 g rice noodles (ribbons)
• 200 g chicken or shrimp breasts (optional tofu)
• 2 eggs
• 1 clove garlic (chopped)
• 1 handful of mung bean sprouts
• 2 tablespoons fish sauce (or soy sauce as a substitute)
• 1 tablespoon cane sugar (or regular sugar)
• 1 tablespoon lime juice
• 1 tablespoon oil (e.g. sesame)
• 2 tablespoons chopped peanuts
• Chives or cilantro to sprinkle
• Chili in flakes (optional)

Preparation method:

1. Macaron: cook or soak according to instructions (until soft, but not overcooked).
2. Fried: In a wok or large frying pan, fry garlic and chicken (or tofu) in oil.
3. Eggs: pour the eggs into the pan, mix and fry like scrambled eggs.
4. Add pasta and pour the sauce: fish sauce, sugar, lime juice. Mix it all up.
5. Finally add the bean sprouts and sprinkle with peanuts, chives and chili.

Ingredients (for 2 servings):

• 150 g arborio rice (for risotto)
• 1 small onion (finely chopped)
• 1 clove of garlic (optional)
• 1 tablespoon butter + 1 tablespoon olive oil
• 100 ml white wine (optional)
• 500 to 600 ml vegetable or poultry broth (warm)
• 30 g Parmesan (start)
• Salt, pepper to taste

Preparation method:

1. Fry the onions in butter and olive oil until they are vitrified. Add garlic (if you use).
2. Pour rice and fry for 1 to 2 minutes until slightly glassy.
3. Pour wine, stir until evaporated.
4. Gradually add the broth (after the ladle), stirring constantly until the rice absorbs the liquid. Repeat for 15 to 20 minutes.
5. When the rice is creamy and al dente, take off the heat, add Parmesan cheese, possibly some butter. Season.
